ASPIC – A popular dish that is passed through generations

Aspic is a popular traditional dish in which ingredients are set into a gelatin made from a meat stock. We have prepared a simple recipe for you to try and make a homemade aspic!


Ingredients for 4 people:4 pig trotters,4 pigskins, a piece of pig head,5 tablespoon vinegar,3 parsley branch,1 celery root,1 carrot,1 onion,3 cloves of garlic,3 laurel leaves,10 grains of pepper,2 eggs,1 slice of lemon;


Boil water with vinegar. Once boiled, add pig trotters, skin and a piece of head. A watery solution should be about 5 centimeters above the meat. Cook for an hour, add parsley, sliced celery and carrot, onion, garlic, grained pepper, laurel and a slice of lemon. Cook for an hour until tender. Once cooked, remove from heat, pour 3 tablespoons of cold water and leave to dissolute. Take out the meat, cut into cubes, place it in a porcelain bowl. Remove fat from top of the soup, rinse through a cloth and pour over the meat. Cool in the refrigerator. Meat can be garnished with boiled egg slices and vegetable cubes.
