Codfish is a traditional dish usually prepared for the holidays. Try our simple recipe for codfish in white and enjoy the richness of the meal and taste a part of our gastronomic heritage!
Ingredients:
1 dried codfish (450-500 g),½ kg potato,2 onions,3-4 cloves of garlic,1 bunch of parsley,1-2 anchovies fillet,50 ml olive oil, pepper,1 glass white wine
Preparation:
Soaked codfish in cold water (preferably soaked for 2-3 days until puffed) bring to boil and rinse. Keep cooking water. Remove fins, skin, and bones, cut chunks of fish. In a pot on olive oil place a bottom layer of onion slices, a layer with sliced potato and a layer of fish. Sprinkle with chopped parsley, add 1-2 anchovies fillets and finely chopped garlic. Add a tablespoon of tomato concentrate or 3-4 tablespoons of homemade tomato sauce. Season with pepper. Pour with cooking water and leave to simmer. Once potato is done, pour in a glass of wine and bring to boil again.
