PAŠTICADA STEW

The most famous Dalmatian dish is a favorite among culinary lovers in Croatia! Try this authentic Croatian recipe for Pašticada stew and enjoy in a traditional Dalmatian meal!

Ingredients:

1.2 kg veal loin,15 kg pancetta,2 onions,200 g carrot,200 g celery,6 cloves of garlic,2-3 tablespoon lard,2 tablespoon tomato puree,3 dcl vinegar,3 dcl red wine,2 dcl prošek regional-styled wine,rosemary,salt,pepper

Preparation:

Veal meat cut in larger chunks. Mix vinegar with red wine, chopped onion, and garlic. Rosemary optional. Soak the meat in the marinade for 3 hours. Take out the meat, dry, coat in flour and gently fry on low heat. Set the meat aside, add to the pan marinaded onion and garlic, chopped carrot, rosemary, celery and dry plums. Saute for about 20 minutes, bask with marinade. Fried vegetables grind with a hand mixer, add in fried meat and finely chopped pancetta, pour with prošek wine, season to taste. Cook pašticada for 2 hours until meat tenders.
