Where the Krka River Kisses the Adriatic Sea

The cobblestone streets of Skradin have taken on a festive charm, with curious footsteps echoing through the paths, signaling the growing excitement for the 1st Skradin Risotto and Lifestyle Festival. The buzz is building, and one can only imagine the atmosphere on Friday, September 13, and Saturday, September 14, when, starting at 5 p.m. at Trg Male Gospe, the Risotto Cooking Show will take place. Attendees can taste various types of risotto prepared by skilled chefs!

The Legendary Recipe: A Ten-Hour Masterpiece

Preparing Skradin risotto is no small feat—it takes as long as ten hours! Here’s how it’s done: In a large pot, sauté onions in olive oil for 20 minutes. Then, add veal cubes and sauté them, basting occasionally with stock until the meat is fully cooked. Next, add tomato puree, chicken fillet cubes, nutmeg, and, if you wish, finely chopped prosciutto. Once the mixture comes to a brief boil, add rice and cover it with stock, allowing it to cook. Season the risotto with salt, pepper, and parsley. Mix in half a cup of homemade prosecco and grated sheep’s cheese (or Parmesan) by the end of cooking. Once the risotto is fully cooked, add butter cubes for enhanced aroma and let it “rest” for a few minutes before serving. Finally, sprinkle it with grated cheese and serve alongside a good red wine.

The festival program for 2024 has been adapted to weather conditions but remains packed with exciting activities. Panels, a gastro event with cooking shows, and music will all be part of the experience, with special presentations from local and guest restaurateurs.

Nothing from the program will be left out, and the festival’s highlight, the famous Skradin risotto, will be served on Saturday afternoon from 5 p.m., alongside other risotto variations, paired with excellent drinks provided by our local winemakers.
