Infinity: The Adriatic Takes Centre Stage

Infinity is the most generous of the four residences, accommodating up to six guests across two bedrooms.

Inside, the atmosphere is contemporary and relaxed, but it is the terrace that naturally draws you outdoors. A private pool sits between the residence and the Mediterranean garden, while beyond it the Adriatic becomes part of the architecture.

Morning coffee can become a long breakfast. A swim can easily turn into an afternoon beside the pool. And a hammock, positioned as if someone understood precisely what island life should feel like, makes doing absolutely nothing seem like a perfectly respectable plan.

Designed for two adults, the one-bedroom residence opens towards Vinogradišće Bay and the surrounding islands, creating an almost cinematic sense of escape.

There are two pools, including one on the rooftop alongside a jacuzzi, and the higher perspective changes the mood completely. From here, the archipelago stretches outward while boats quietly cross the water below.

It is easy to see why Cloud invites a certain kind of delicious detachment from the outside world.

And then there is Horizon.

For us, this is perhaps the residence that most perfectly expresses the spirit of Zori.

Designed for two adults, its serene contemporary interiors open onto a large terrace overlooking the sea and Mediterranean garden. Outside, a pool, jacuzzi and hammock turn the terrace into a private observation point for the changing light.

During the day, the Adriatic dominates. Towards evening, the horizon begins to steal the show. The light softens, the temperature drops, glasses appear almost instinctively, and the sky slowly moves through its evening palette.

There are sunsets you photograph. And there are sunsets you simply sit through because reaching for your phone somehow feels unnecessary.

Horizon belongs to the latter category.

Zori Restaurant: An Island Story Told at the Table

Eventually, however, there is one very good reason to leave your residence.

Zori Restaurant has long been part of Palmižana’s identity, and the dining experience feels entirely connected to the landscape around it.

Open seasonally from May to October for lunch and dinner, the restaurant builds its cuisine around the Adriatic, the garden and Dalmatian culinary tradition; familiar regional ingredients are approached with refinement and contemporary technique, with occasional Japanese influences adding precision rather than theatricality.

Fresh fish is selected according to the day’s catch. Vegetables come from the garden. The traditional gradele, the Dalmatian grill fired with wood, remains central to the preparation of fish and gives it the distinctive simplicity that Mediterranean cooking achieves when excellent ingredients are allowed to remain recognisable.

And that, perhaps, is the secret.

The cuisine does not need to compete with the island – it belongs to it.

Lunch here can stretch happily into the afternoon, shaded from the sun with the sea only steps away. Dinner brings a different mood: softer light, slower conversations and the particular pleasure of knowing that once the final course arrives, there is nowhere else you are expected to go.

Having spent years searching for places that offer something beyond the expected, I have become rather careful with the word outstanding. Zori Timeless deserves it.

We stayed at Horizon, where privacy, beautifully considered design, the Mediterranean garden and that extraordinary Adriatic sunset create exactly the kind of understated luxury I value most.

But exceptional hospitality is never only about a beautiful setting. It is about people. The service was warm, intuitive and genuinely personal, and Filip deserves a special mention — attentive, charming, professional and seemingly always one step ahead.

The food completes the experience beautifully. Zori Restaurant is not simply somewhere to dine while staying here; it is part of the reason to come.

For me, true luxury is ultimately about how a place makes you feel. When design, atmosphere, service and gastronomy come together so naturally that staying itself becomes one of the pleasures of the journey, I have one word for it:
